Title: Party Potatoes for a Crowd

3lgBags thawed Ore-Ida Frozen Hashed Browns (11 servings) or eq
3lgOnion(s), diced (6 cups)
4lgGarlic clove(s), crushed
1tbFreshly ground pepper plus more to taste
1 1/2lb(to 2 lb) Gruyere cheese, grated
1 1/2lb(to 2 lb) Havarti cheese, grated
3 (to 4) 5oz containers Boursin cheese with herbs, crumbled
1ptHalf and half

Preheat the oven to 350 F. Grease a large roasting pan.

In a very large bowl, combine the thawed potatoes, onions, garlic, and pepper with your hands, tossing until well combined. Mix in the smaller quantity of all the cheeses thoroughly. Taste for seasonings, adding more cheese and more pepper if desired. Pack the potatoes into the roasting pan, pour the half and half over them, and grind some more pepper on top.

Bake the potatoes, uncovered, for at least 1 hour, depending on how crusty you want them to be (2 hours if you like your potatoes very brown). Halfway through the baking, stir the potatoes from the bottom up to get the already formed brown bits mixed throughout; then leave the potatoes alone. If they're browning faster than you want, cover the pan or lower the heat; if you have the opposite problem, turn up the heat.

This is a very forgiving recipe. It can be multiplied indefinitely. It can be baked at any temperature, depending on what else you need your oven for and it tastes wonderful.
